Polka Dot Love & Cold Lemon Chicken

If you were to fly across the country to go with me on a girls' trip to the Big Apple, I would probably clean my house for you.
I might even make you dinner. Cold lemon chicken, crusty Italian bread, a crisp spinach salad and little cakes for dessert.
If you were particularly adorable, there would even be a small welcome gift at your plate.

And...maybe, if I really felt happy-crazy, I would go all out and dress up to match the table.

BUT you would only get the song and dance number (with top hat and "cane") if I really really loved you!
Cold Lemon Chicken with Cucumber Sauce
1/2 cup chicken broth
1 cup water
1 bay leaf
1 clove garlic, peeled & cut in half
1/2 cup lemon juice
3 whole chicken breasts, skinned, boned & halved
In a large saucepan, combine the first five ingredients. Bring to a boil and add chicken. Cover and poach over medium-low heat for 15-20 minutes, until done in center of breasts. Remove chicken from broth, cover and refrigerate to cool thoroughly.
Sauce:
1/4 cup mayonnaise
4 tsp. finely chopped cucumber, peeled and seeded
2 tsp. grated lemon rind
2 tsp. lemon juice
1/4 tsp. each salt and pepper
Mix and dollop over chilled chicken. Top each with a lemon or cucumber slice and a sprinkle of paprika.

this was the most fabulous sight to see after a long flight and a bout of lost luggage! so welcoming and fun! a polka dot party with cute hostess wearing a coordinating blouse! you outdid yourself. and yes, i will be making that chicken with the garnish on top. even my mother in law will be impressed!
