Ok, this is really my Grama June's recipe...but I cooked it for my mother-in-law's first night. (She also ate it for lunch and dinner again tonight...what a good sport!) But it is delicious....everyone asks for the recipe, so I'll share.
White Bean, Sausage and Pasta Soup
Cook 1/2 lb. Italian sausage, drain fat.
Add: 1 large onion, chopped
3 garlic cloves, chopped
1 large carrot, chopped
Cook until onion is limp.
Add: 6 cups chicken broth
3 cups water
1 tsp. dried basil
1 1/2 c. white beans (washed and soaked overnight)
OR 2 cans white beans, with liquid
Simmer together 2 hours.
Add: 14 oz. chopped tomatoes and juice
1 cup dry pasta shells
Cook til pasta is tender.
Serves 8-10.
Very hearty and flavorful! Perfect for fall...enjoy!
