Red Velvet Cupcakes



Mom used to make Red Velvet Cake all the time. Especially around the 4th of July. She'd make a 9x13 inch cake and then decorate to look like Old Glory. (Might be fun for Flag Day --which is this Saturday, by the way.)


Or try this recipe for the cupcake version. (Just promise me you'll make the real frosting. I know. It's a pain to make. But the whipped cream consistency and rich flavor is the perfect match for the not-too-sweet cake!)

By the way, Mom's recipe calls for TWO fluid ounces of red dye instead of one.

And she probably just thought it was the fireworks making us all so hyper...

Red Velvet is my favorite. I, too, use my mom's recipe, which calls for 2 ounces of food coloring. I completely agree with you on the frosting. You just beat that frosting until it is nice and fluffy. It is delicious!!

I'm so proud of you for using the REAL frosting recipe. It is tricky but it just isn't the same with out it. Now with that said, I have to tell you my "deep secret" for making red velvet cake -- I use a Duncan Hines red velvet cake mix and add a 3.9 ounce chocolate flavor instant Jello pudding mix. I think it is as good as the real deal! Oh boy, flag day & cabin cleaning day this Saturday... the perfect reasons for a red velvet cake!

I've never dared venture into Red Velvet territory because I'm a really messy cook & I know I'd end up looking like a Texas Chainsaw Massacre victim (red dye).

We are having a grooms cake and it is going to be red velvet!! I think it is a southern tradition, his mom sent a recipe. I can't wait to try the REAL frosting!

This is my husband's favorite. I make it for him at all occasions - happy and sad but I am ashamed to admit that I've never tried it from scratch, I've only ever dared use the cake mix. I think I'm going to be brave and try your recipe when he's home on R&R in October. Thx!!

Yum! If I hadn't already stuffed myself tonight eating Brazilian food and Mexican birthday cake . . . I would be in the kitchen making red velvet cupcakes right now. These will have to wait until tomorrow.
